Ingredients

Berry Layer
  • 2 cups soft berries (such as strawberries, blueberries, or raspberries) Choose ripe berries for optimal softness; if necessary, lightly steam to soften further.
Yogurt Layer
  • 2 cups plain yogurt (or Greek yogurt for extra protein) Use a smooth, creamy style yogurt; Greek yogurt can provide additional thickness and protein.
Sweetener (optional)
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste; may also use a sugar substitute if preferred.

Method

Assembling the Parfait
  1. In a blender, combine the soft berries and honey or maple syrup (if using). Blend until completely smooth, achieving a pureed texture. If the mixture is too thick, add a small amount of water or yogurt to help blend.
  2. In a separate bowl, stir the yogurt until smooth. If desired, you can blend the yogurt for an even creamier texture.
  3. To assemble, layer the berry puree and yogurt in serving bowls or glasses, alternating between the two. Start with a layer of berry puree, followed by a layer of yogurt, and repeat until all ingredients are used.
  4. Serve immediately or refrigerate for up to 2 hours before serving. Enjoy the parfait chilled for a refreshing treat!

Notes

Texture Tips: For an even smoother texture, blend the berry layer until fully pureed and consider straining it to remove any seeds. If a softer consistency is needed, use fully ripe berries or add a bit more yogurt to the mix for a creamier feel.
This parfait can be stored in the refrigerator for up to 2 days. If you notice any separation of the layers, simply stir before serving. The berries should be soft enough to blend easily, and the parfait should have a creamy, smooth consistency.
