Ingredients

Main Ingredients
  • 2 cups low-sodium chicken broth Choose a low-sodium option to control salt content.
  • 1 cup boneless, skinless chicken breast Cut into small pieces for even cooking.
  • 1 cup carrots, chopped Peel and chop into small pieces for quicker cooking.
  • 1 cup zucchini, chopped No need to peel; just chop into small pieces.
  • 1 cup potato, peeled and cubed This adds creaminess to the purée.
  • 1 tablespoon olive oil For sautéing the chicken.
  • 1 teaspoon dried thyme Adds a wonderful flavor.
  • 1 teaspoon garlic powder For added depth of flavor.
  • 1 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon black pepper Optional, adjust for spice preference.

Method

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the chopped chicken and sauté until cooked through, about 5-7 minutes. Ensure the chicken is tender and fully cooked, then remove from heat.
  2. In the same pot, add the chicken broth, carrots, zucchini, and potato. Bring to a boil, then reduce to a simmer. Cook until all vegetables are fork-tender, approximately 15-20 minutes.
  3. Once the vegetables are soft, add the thyme, garlic powder, salt, and pepper. Stir well to combine.
  4. Using an immersion blender, blend the mixture until completely smooth. If you prefer, transfer to a blender in batches and blend until silky.
  5. Check the consistency; if it's too thick, add a little more chicken broth until desired smoothness is achieved.

Notes

Texture Tips: To achieve the perfect soft texture, ensure all ingredients are cooked until fork-tender before blending. If you desire an even smoother consistency, blend for an additional minute and add more broth as needed.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth if it thickens.
