- In a large pot, heat the olive oil over medium heat. Add the chopped chicken and sauté until cooked through, about 5-7 minutes. Ensure the chicken is tender and fully cooked, then remove from heat.
- In the same pot, add the chicken broth, carrots, zucchini, and potato. Bring to a boil, then reduce to a simmer. Cook until all vegetables are fork-tender, approximately 15-20 minutes.
- Once the vegetables are soft, add the thyme, garlic powder, salt, and pepper. Stir well to combine.
- Using an immersion blender, blend the mixture until completely smooth. If you prefer, transfer to a blender in batches and blend until silky.
- Check the consistency; if it's too thick, add a little more chicken broth until desired smoothness is achieved.
